Huli Chitranna

   A dish which has many different small elements but worth a try because it tastes so good. This recipe is generally served in temples as Prasada... 


Ingredients:

Cooked rice - 2 cups
Tamarind - 1 lemon size
Green chillies - 2 to 3
Red chillies - 2 to 3
Oil - 2 tbsp
Mustard - seeds - 1 tsp
Channa dal - 2 tsp
Urad dal - 1 tsp
Groundnuts - 2 tbsp
Curry leaves - 10 to 15
Asafoetida - 1/4 tsp
Turmeric - 1/2 tsp
Salt to taste

Dry powder:
Channa dal - 1 tsp
Urad dal - 1 tsp
Fenugreek seeds - 1/2 tsp
Sesame seeds - 1 tsp
Coriander seeds - 1 tsp


Method:

Spread the cooked rice in a plate and allow it to cool. It should not be mushy.

Soak the tamarind in water for sometime and extract the pulp.

Heat 1/2 tsp oil and add turmeric to it. Add it to the rice and mix well.

Not again heat rest of the oil and add mustard seeds. Once they splutter, add groundnuts, channa dal, urad dal and asafoetida and fry till the groundnuts become golden. 

Now add slit green chilles, red chillies and curry leaves. Fry everything well and switch off the flame and allow it to cool.

Now dry roast all other ingredients mentioned separately and ground them to a fine powder. Mix the powder first with the rice properly. 

Next mix the tempered spices with the rice and mix well add salt as per taste.

Serve hot along with some papad or sandige..
